El Papaviejos es un dulce típico de la provincia de Almería, unos bollos fritos muy esponjosos y que antiguamente se consumían el “jueves lardero” (último jueves antes de Semana Santa), aunque cada día se ve más en las cocinas de Almería durante todo el año. Como su nombre indica “Papaviejos”, la patata es uno de los ingredientes y singulares que tiene este plato. En Almería muchos la conocen como “el postre de pobres”, un postre de toda la vida, ya que en tiempos de hambruna la patata era un ingrediente fácil de conseguir y más barato que la harina.
