Esta receta de Sopa de Jijote, la preparaban nuestras abuelas en zaragoza con las gallinas que criaban en los corrales y las carnes más baratas que encontraban en las tiendas, o carnes que provenían de las matanzas de animales como el cerdo, en los pueblos. Con esta receta, al igual que con otras recetas de caldo, nuestras abuelas, aprovechaban el pan duro del día anterior para hacer al caldo más contundente, pues en aquellas épocas, había mucha hambre y se aprovechaba todo.
