Este plato tradicional de la gastronomía canaria tenía antiguamente como ingredientes, en épocas de mucha hambre, donde no se tiraba nada, los sobrantes del puchero o del cocido del día anterior, de hay el nombre de ropa vieja. En la actualidad, en las Islas Canarias es un plato que se prepara sin restos, considerado por muchas familias un plato festivo que se cocina en los hogares canarios los fines de semana.
