El Revuelto de Perretxikos, es uno de los platos más típicos del País Vasco, sobre todo en la Provincia de Álava, que se cocina cuando llega la primavera. Se trata de un revuelto de setas de primavera, hongos muy carnosos y con un agradable olor a harina fresca que se cocina en restaurantes y casas durante dicha temporada. Aunque parece sencillo de preparar, cuesta mucho llegar a prepararlo bien. Se debe elaborar con mucho cuidado para poder conservar al máximo el sabor y aroma de las setas. Se ha convertido en un símbolo en las fiestas de San Prudencio de Álava, donde se suele combinar con caracoles.
